The MICHELIN Guide Florida returns on May 28 and if you’ve been following along, you already know this isn’t just another announcement.
The guide has expanded statewide. The ceremony is gone. And the questions surrounding consistency, standards, and direction feel louder than ever.
In my previous coverage, I broke down how 2025 revealed a more conservative Michelin than many expected. Promotions stalled. New stars were limited. And perhaps most telling, being named as an “addition” didn’t necessarily translate into upward momentum. If anything, it confirmed that Michelin operates on its own timeline, not ours. As of this publishing, no new additions have been announced.
Now, heading into 2026, that foundation matters.
This episode connects those dots. It’s about understanding the framework behind them. If last year taught us anything, it’s that most people are reacting to the guide without fully understanding how it behaves and what it values.
We’re now looking at a Florida guide that has:
- Expanded beyond Miami, Orlando, and Tampa into a true statewide ecosystem
- Lost several notable restaurants that once shaped the conversation
- Gained an entirely new layer of complexity in how recognition may be distributed
- And quietly removed the spectacle of a ceremony, making this the most low-visibility, high-impact reveal yet
At the same time, Michelin has shown, outside of Florida, that it is capable of recalibrating. Last year’s bold decisions in other U.S. markets challenged the idea that stars are permanent, raising an important question: is Florida next in line for that kind of correction, or will it remain in its “grace period” phase?
This episode sits right in that tension. Drawing from years of dining across Michelin-starred restaurants globally, along with over a decade of tracking Miami’s relationship with the guide, I break down what matters heading into this announcement.
You’ll hear:
- Which current starred restaurants I believe are secure and which ones are quietly vulnerable
- Where I see potential star losses (yes, we’re going there)
- The strongest contenders for new stars, including the ones that feel inevitable vs. the true wild cards
- The only restaurant I believe is pressing toward two-star territory and whether Michelin will actually make that move
- Which long-overlooked spots deserve to finally break through
- My take on Bib Gourmand shifts, new additions, and where Michelin may expand its footprint across the state
- The wildcard regions (including areas outside Miami) that could reshape the conversation entirely
When May 28 hits, the conversation will be loud. Opinions will fly. And as always, Miami will have a lot to say. The difference is, after this episode, you’ll actually understand what you’re looking at. Listen in, and decide for yourself where Florida really stands before the guide makes it official.
