Top 30 Bites: Miami 2019

How to even begin to choose only 30 bites from the many dishes I had throughout the year? I love that it wasn’t easy, and that each photo brought back memories of each experience. This, of course, means Miami continued making this exercise tough on me by once again upping the game. I researched, chose, changed my mind, chose again, and finally committed to a solid 30.

This isn’t a roundup of photos by others found online or a sponsored post. I actually photographed, ate, and paid for every single dish listed. Perhaps you saw them posted on the blog, or on my Facebook, Twitter, or Instagram accounts at some point this year (and I guarantee you will see them again in 2020). Some dishes seem to never leave my list and made a return appearance. I like what I like, #sorrynotsorry. Others are new, but made quite an impression…like the trailblazing # 1 spot.

30. Stubborn Seed: Pomme Soufflé topped with caviar

29. Graziano’s Restaurant: Panqueques con Dulce de Leche

28. Amara at Paraiso: Arroz Verde cilantro rice, romesco wild mushroom escabeche, marinated kale, pickled onion, jalapeño, avocado, fried egg

27. Le Jardinier:  Mango Crémeux and Coconut Sorbet

26. Stubborn Seed: Raw Atlantic Fluke habanero yogurt, mint, puffed rice, snap peas, and passion fruit.

20. Jaguar Sun: Agnolotti blue crab, corn, saffron

19. Bourbon Steak: Caviar Parfait Alverta President Petrossian Caviar, smoked salmon, crispy potato, crème fraîche

18. Navé: Braised Lamb Lasagna spinach bechamel, confit cherry tomatoes

17. L’Atelier de Joël Robuchon Foie Gras Royale & Butternut Squash Espuma (amuse bouche)

15. Ama at Kaido: Chawanmushi with fresh truffle butter

14. Itamae: Pulpo al Olivo hamachi, avocado topped with octopus, botija olive aioli, sarza criolla 

13. Boia De: Beef Tartare tonnato sauce, shallow-garlic crumb

12. Alter Grouper black rice, shoyu hollandaise, sea lettuces, cucumber

11.Ember Smoked Fried Chicken 1/2 organic free-range chicken, spicy pickles, caviar butter
