Bali to Wynwood? No sweat!
Chef Nic Vanderbeeken, of Apéritif restaurant and bar at the Viceroy Hotel in Ubud, stopped in to join our very own chef Brad Kilgore for a one-night collaboration dinner at Alter.
The result? Well, I know where I am headed the next time I am in Bali. I also don’t need any further confirmation of the gem we have in chef Kilgore and Alter, but yet here we are. Again.

The night felt vibrant and full of promise. There wasn’t an empty seat in the house, for a good reason. The tide has turned. Those who say South Floridians don’t support fine dining shouldn’t interrupt those doing it. Or perhaps should pay closer attention. What a magnificent display of interest and engagement!
Offered for one night and during several seatings, this collaboration flowed effortlessly. The menu of 9 courses, by both chef Vanderbeeken and Kilgore, delivered artful plating and a beautiful crescendo of successfully layered flavors: beginning with a light escolar sashimi, working up to the decadent duck, and ending with a triple dose of dessert. I enjoyed every dish (and not-so-secretly hope Alter adds the Foie Gras ‘Milk & Honey’ to the menu). Thank you to everyone involved for an unforgettable night.
