Due to the traditional practice of force-feeding the animals to fatten their livers, the French delicacy is no stranger to controversy. A 2012 California foie-gras law banned the practice as well as the sale of products that are a result of that process, but (although still contested and in the court system) it was temporarily overturned several years later. Foie gras cannot be produced in CA, but it can still be sold.

The current menu lists it differently than photographed above as: ($25) Hudson Valley seared foie gras, white balsamic glazed donut, kiwi, baby onions, and a coconut cashew crumble. But you get the picture. Even with the chef changes they’ve experienced during the last several years, there is always a solid foie gras dish listed on The Forge’s menu.

While I’m not a big fan of the ($14) Espresso and Foie Gras combination, I must be in the minority; this dish has been (and remains) on the menu since Day 1. I do, however, love the ($16) peanut butter and raspberry jam foie gras torchon.

It’s a Hialeah thing, you wouldn’t understand. Except, it works. It really, truly works. The sweetness of the guava and savory of the foie gras ($20) overwhelms in the best possible way. Dale, why be normal?

Pied à Terre offers not one, not two, but three different Canadian foie gras dishes ($25 ea.) on their menu. I’ve never had the Bon Bon version anywhere else. Thinly fried potato strings wrapped around the rich foie gras?  Oh yeah!

The dish ($24/$36) represents Miami’s eclectic nature by using maduros. The plantain’s sweetness incredibly blends and compliments the savory nature of the naranja agria foie gras.

    One of the most amazing Foie Gras Dish I have tried must have to be at Sushi Samba Miami Beach. It is sad it’s not included on this list. From flavor to presentation doesn’t compare to the dishes included in the article. Strongly recommend
